My old folks (me too!) swear by this recipe:Rubbed with salt and sustlquenbey washed, chicken legs with skin sauteed in LOTS of ginger, onion, chili pepper and garlic in olive oil . Cover and let simmer for 10 mins in low heat. Turn legs from time to time. Next, add hot water (not too much) and after 5 mins skinned young papaya meat and boil until chicken and papaya tender. Once tender, turn off heat and add salt and pepper and green chili leaves.Serve piping hot.
